Raw Carrot Cake

 Ingredients (single serve):
1/2 cup carrot, shredded (all water strained out is possible) // 4 dessert dates, pitted // 2 tbsp raisins // 1/8 tsp cinnamon // 1 tsp maple syrup (omit if raw) // stevia, to taste // walnuts, optional

Method:
Blend carrots, dates, cinnamon, syrup and stevia until your desired consistency. I still like my with distinct carrot strands! then stir in nuts and raisins and enjoy. It goes fab with a dollop of coconut yogurt or some vegan cream cheese stirred with maple syrup.
