Coconut Granola

I have an ongoing love affair with granola. sweet, crunchy, cluster-y granola. And this way you know exactly what's in it, and you can mix it around. Not a nut person? Your granola doesn't have to have any nuts! Bye bye endless hours picking out banana chip chunks from store-bought brands.

Ingredients:
Dry:
2 cups rolled oats // 1/3 cup sunflower seeds // 1/3 cup pumpkin seeds // 2 tablespoons brown sugar // 1 teaspoon cinnamon // 1/4 teaspoon salt
Wet:
4 tablespoons olive oil // 1/3 cup agave // 1 teaspoon vanilla extract // 1/4 teaspoon coconut essence
Final:
1/2 cup coconut shreds, unsweetened

Method:
Mix dry ingredients and wet ingredients in two separate bowls, then pour in wet ingredients into dry and mix throughly. Spread on a silpat-lined baking tray and bake at 150 degrees C for half an hour, stirring every 10 minutes. When golden, remove from oven, add coconut shreds when still hot and leave to cool, thus toasting the coconut bits!
When cooled, store in an air-tight jar and enjoy! It goes great on coconut yogurt with a drizzle of maple~
